Imran Samso bagged the winner in the 48th minute, pouncing on a defensive blunder to give the Cops a rare victory over the East Coast side - their first since 2017.
Police almost doubled their lead on the hour mark, but Bruno Suzuki's strike was chalked off for offside.
With just one game left in the Super League season, Police sit eighth on 27 points.
